No-mato bolognese


1 onion halved⁣
5 baby beetroot quartered⁣
3 carrots cut into thirds⁣
1 sprig rosemary⁣
2 springs thyme⁣
1 tsp bone broth concentrate⁣
salt and pepper (if tolerated)⁣

1 onion diced⁣
2 cloves garlic⁣
500g beef mince⁣
2 small zucchini’s spiralled or zucchini noodles⁣
1 tsp mixed herbs⁣

Hard goats cheese for serving if tolerated.⁣


  1. ⁣Place all ingredients for the sauce in a saucepan and cover with water. Bring to the boil then turn down to simmer until beetroot is soft.⁣
  2. While sauce is cooking, start on the bolognese. Sauté onion and cook mince. Add zucchini noodles, garlic and herbs.⁣
  3. Remove stems from the herbs in the sauce and blend.⁣
  4. Mix sauce with mince and serve with goats cheese if tolerated.
