1 onion halved
5 baby beetroot quartered
3 carrots cut into thirds
1 sprig rosemary
2 springs thyme
1 tsp bone broth concentrate
salt and pepper (if tolerated)
1 onion diced
2 cloves garlic
500g beef mince
2 small zucchini’s spiralled or zucchini noodles
1 tsp mixed herbs
Hard goats cheese for serving if tolerated.
- Place all ingredients for the sauce in a saucepan and cover with water. Bring to the boil then turn down to simmer until beetroot is soft.
- While sauce is cooking, start on the bolognese. Sauté onion and cook mince. Add zucchini noodles, garlic and herbs.
- Remove stems from the herbs in the sauce and blend.
- Mix sauce with mince and serve with goats cheese if tolerated.
