Breakfast Bowl

I recently posted on Instagram about building a plate. Having a nutritionally balanced meal increases satiety, maintains blood glucose levels, reduces fatigue, improves sleep and promotes overall health.⁠⁠

There are many variations on ways to build a plate, this is just one way of building a breakfast bowl. If you don’t like something, swap it out for something else in the same category!

If I’m using two saucepans, I can make this in about 10 minutes!

Serves 1

Ingredients

1/2 carrot, sliced
3 stalks broccolini, roughly chopped
3 stalks asparagus, roughly chopped
1/2 C sweet potato, diced

1 tbsp marinated goats cheese + 1 tbsp marinated oil 
Handful of spinach

Scrambled eggs
2 eggs, beaten
1 tbsp olive oil
1 tbsp gee
2 tbs parsley, roughly chopped

salt and pepper to taste

Method

  1. Place carrot, broccolini, asparagus and sweet potato in a steamer over boiling water.
  2. In a seperate saucepan, place beaten eggs, oil, gee and parsley. Keep eggs moving until cooked to desired and remove from heat.
  3. When carrot, broccolini, asparagus and sweet potato are cooked, place in a bowl with the scrambled eggs, spinach, goats cheese and a drizzle of oil.
  4. Top with salt and pepper if desired.
