Serves 1
1/2 carrot, sliced
3 stalks broccolini, roughly chopped
3 stalks asparagus, roughly chopped
1/2 C sweet potato, diced
1 tbsp marinated goats cheese + 1 tbsp marinated oil
Handful of spinach
Scrambled eggs
2 eggs, beaten
1 tbsp olive oil
1 tbsp gee
2 tbs parsley, roughly chopped
salt and pepper to taste
I recently posted on Instagram about building a plate. Having a nutritionally balanced meal increases satiety, maintains blood glucose levels, reduces fatigue, improves sleep and promotes overall health.
There are many variations on ways to build a plate, this is just one way of building a breakfast bowl. If you don’t like something, swap it out for something else in the same category!
If I’m using two saucepans, I can make this in about 10 minutes!
