Ingredients
buns
2 ripe bananas mashed
3/4 C coconut milk
1/4 C coconut sugar
1 tsp baking soda
1 tsp apple cider vinegar
2 tsp cinnamon
2 tbs tapioca & 1 tsp gelatine mixed in 1/4C boiling water (leave for a minute before incorporating)
Rind of 1 orange finely grated
Rind of 1 lime finely grated
1/2 C coconut flour
1/2 C sultanas
cross
1 tbs honey
1 tbs ghee (replace with coconut oil if ghee isn’t tolerated)
1 tbs coconut oil
1.5 tbs coconut flour
Method
- Preheat oven to 170, line and grease a tray.
- Mix the first lot of ingredients with electric beaters. Sift coconut flour and beat again. Stir in sultanas.
- Use two desert spoons to spoon balls onto baking tray.
- Put the ingredients for the cross in a bowl and microwave for 10 second. Mix and then place in a piping bag and pipe crosses on to the hot cross buns.
- Bake for 30 mins.
