Ingredients

buns⁣
2 ripe bananas mashed⁣
3/4 C coconut milk⁣
1/4 C coconut sugar⁣
1 tsp baking soda⁣
1 tsp apple cider vinegar⁣
2 tsp cinnamon
2 tbs tapioca & 1 tsp gelatine mixed in 1/4C boiling water (leave for a minute before incorporating)⁣
Rind of 1 orange finely grated⁣
Rind of 1 lime finely grated⁣

1/2 C coconut flour⁣
1/2 C sultanas⁣

cross⁣
1 tbs honey⁣
1 tbs ghee (replace with coconut oil if ghee isn’t tolerated)⁣
1 tbs coconut oil⁣
1.5 tbs coconut flour⁣

Method

  1. ⁣Preheat oven to 170, line and grease a tray.
  2. Mix the first lot of ingredients with electric beaters. Sift coconut flour and beat again. Stir in sultanas.⁣
  3. Use two desert spoons to spoon balls onto baking tray.⁣
  4. Put the ingredients for the cross in a bowl and microwave for 10 second. Mix and then place in a piping bag and pipe crosses on to the hot cross buns.⁣
  5. Bake for 30 mins.⁣
